Cleave Cloves With Caution
Intensely aromatic cloves are a popular spice for both sweet and savory dishes, and are available powdered or whole.
If you grind your own cloves, though, be careful.
Their phenol chemicals have mildly corrosive properties and may pit or soften plastic parts of a grinder – embedding the strong scent of cloves in the appliance.
Grind cloves with a stone mortar and pestle, or skip the process entirely and buy ground cloves.
Recipe of the Day: Roasted Acorn Squash with Curry and Parmesan
This pretty, rustic side dish dresses up any dinner table in minutes.
The aromatic curry combined with the sweet flavor of acorn squash and the nuttiness of Parmesan make this a fall favorite.
Makes 4 servings
1 medium acorn squash (1-1/2 pounds)
2 teaspoons olive oil
1/4 teaspoon garlic salt
1/4 teaspoon curry powder
1 tablespoon grated Parmigiano-Reggiano cheese
2 teaspoons chopped flat-leaf (Italian) parsley
*Use as many organic ingredients as possible.
Preheat the oven to 375 degrees Fahrenheit.
Lightly coat a rectangular baking dish with cooking spray.
Wash the squash and halve lengthwise (see note).
Scrape out and discard the seeds.
Cut each half crosswise into 1/2-inch-thick half-moons.
Combine the oil, garlic salt, and curry powder in a small bowl.
Brush each squash slice with the oil mixture and arrange the half-moons in the baking dish with slight overlap.
Bake for 25 minutes, or until the squash is tender.
Remove from the oven and sprinkle with the cheese and parsley.
NOTE: For easier slicing, soften the whole unpeeled squash first by microwaving on high for 3 minutes.
Cool and then slice as described.
Per serving: 90 calories, 4 g total fat (<1 g saturated), 0 mg cholesterol, 190 mg sodium, 14 g total carbohydrates (3 g sugars), 2 g fiber, 2 g protein.
