Yay!! I’ve lost 25.6 pounds total so far with 54.4 pounds to go to reach my goal!  My BMI has dropped from 36.9 to 33.1 and my goal is 24.9.

Day 3 Juice Plan

Start out your day with herbal tea or hot water with lemon and ginger.

Breakfast:

Berry Delight

-8 oz frozen mixed berries (blueberries, raspberries and blackberries)

-steel cut oats

-almond milk

-1 tablespoon of chopped walnuts (adds a great crunch and is packed with omega-3 fatty acids)

Boil 3 cups of water.

Add 1 cup of steel cut oats.

Cook for 25-30 minutes or until steel cut oats are cooked.

Heat the frozen berries and add it into the steel cut oats, add almond milk, add walnuts, and mix ingredients together.

Eat warm.

It tastes like pie filling, but it’s very healthy.

Mid-morning juice:

Green Juice

-6 leaves kale

-2 cups spinach

-1/2 cucumber

-4 stalks celery

-2 apples (Fiji)

-1″ ginger root

Lunch:

-1/2 small white onion

-2 cloves of garlic

-2 cups of spinach

-1 yellow squash

-6 oz boneless chicken breast

-1 teaspoon of coconut oil

-1 teaspoon of balsamic vinegar

Add 1 teaspoon of coconut oil to saucepan or use a grill, season both sides of chicken with a pinch of freshly ground pepper.

It’s best to avoid salt altogether.

Place chicken in saucepan or grill.

Cook for 5-10 minutes on each side or until chicken breast equals 170 degrees Fahrenheit.

In a skillet add 1 teaspoon of coconut oil.

After the coconut oil has melted, thinly chop 1/2 small onion.

Stir around until union becomes transparent.

Then slice 1 yellow squash and add it to the onions.

Wait until squash cooks through.

Stir occasionally.

Add in 2 cups of spinach and cook for 5 minutes.

Add 1 teaspoon of balsamic vinegar and stir.

Close lid and wait 3-4 minutes.

Stir again and serve!

Mid-afternoon juice:

Original V8 Juice recipe

-2 sprigs of parsley

-2 carrots

-handful of spinach

-3 tomatoes

-3 celery ribs

-1/2 cuccumber

1/2 green bell pepper

Snack:

Handful of almonds and 1 apple

Dinner:

Vegetable Soup

-3 tablespoons olive oil

-1 large onion, chopped

-3 cloves garlic, minced

-3 medium carrots, chopped

-3 celery stalks, chopped

-3 tomatoes, chopped with juice reserved

-1 medium zucchini, cut into half moons

-1 cup green beans, trimmed to 1″ pieces

-3/4 handfuls kale or other leafy green like chard or bok choy, chopped into small pieces

-6 cups water

-3/4 tablespoons fresh thyme, chopped

-1 tablespoon fresh oregano, chopped (or 1/2 tablespoon dried)

-1 teaspoon sea salt

-1/2 teaspoon fresh ground black pepper

In a large stock pot, heat the olive oil over medium high heat.

Add the onion, garlic, carrots and celery and saute for 5 minutes.

Add the tomatoes, zucchini, green beans, water, salt, pepper, thyme and oregano.

Stir and bring to a boil.

Reduce the heat to a simmer and cook the soup for 10 minutes.

Add the chopped kale or other leafy greens and cook for an additional 5 minutes.

Season to taste with the salt and pepper.

Before Bed:

Hot ginger and lemon tea.
