Don’t Forget The Veggies
As you’ve learned from making the delicious salads and soups in the last few posts, robust, flavorful vegetables are more than worthy of taking center stage at mealtime.
Antioxidant-rich beets have been grown for sugar production since the 17th century and have been eaten by humans forever.
Beets come in lots of colors, from garnet red to bright gold.
To keep their nutrient power, peel beets after cooking.
And don’t throw away the greens, which also contain antioxidants in the form of chlorophyll and carotenoids.
Save them for your next salad!
Recipe of the Day: Shredded Beets With Crumbled Feta and Creamy Citrus Dressing
It takes only minutes to grate peeled, raw beets in a food processor.
If you prefer, you can also use diced cooked beets, though the texture of raw beets gives this salad more volume and a bit of crunch.
Makes 8 (1/2-cup) servings
4 cups grated raw beets (about 1-1/4 pounds)
1/4 cup citrus vinaigrette
2 tablespoons crumbled reduced-fat feta cheese
2 tablespoons chopped fresh chives
*Use as many organic ingredients as possible.
Toss the beets with the dressing.
Top with the feta and chives.
Serve at room temperature.
Per serving: 80 calories, 3 g total fat (0 g saturated), 20 mg cholesterol, 300 mg sodium, 12 g total carbohydrates (9 g sugars), 2 g fiber, 2 g protein.
