Yay!! I’ve lost 25.6 pounds total so far with 54.4 pounds to go to reach my goal!  My BMI has dropped from 36.9 to 33.1 and my goal is 24.9.

Don’t Go Dutch With Cocoa

Cocoa’s many polyphenols are acidic, which means the antioxidant numbers are less when cocoa powder is alkalized.

Alkali is sometimes added to cocoa during processing to create consistent color, flavor, and texture.

This type of cocoa is labeled Dutch process.

To make sure you get a product with no added alkali – and the most antioxidants – choose “natural,” not Dutch process.

Recipe of the Day:  Fudge Pecan Tea Cookies

Not too sweet, the richness of cocoa and toasted nuts shines through in this elegant companion to tea or coffee.

Makes 3 dozen small cookies

1 cup whole wheat pastry flour

1/3 cup natural unsweetened cocoa powder

1/2 cup pecans, lightly toasted and chopped

1/2 teaspoon baking powder

1/8 teaspoon salt

6 tablespoons maple syrup or agave nectar

2 tablespoons unsweetened vanilla almond milk

1 large egg

1 teaspoon vanilla extract

*Use as many organic ingredients as possible.

Preheat the oven to 325 degrees Fahrenheit.

Lightly coat 2 baking sheets with cooking spray.

Combine the flour, cocoa, pecans, baking powder, and salt in a medium bowl.

Whisk together the maple syrup or agave nectar, egg, and vanilla extract in a small bowl.

Pour the wet ingredients into the flour mixture and stir just to combine.

Halve the dough and form each half into a 9-inch log about 1-1/2 inches in diameter.

Wrap in plastic wrap and refrigerate for at least 1 hour or up to 1 day.

Remove the plastic wrap.

Cut each log into 18 slices about 1/2 inch thick and place on the prepared baking sheets.

(Be sure to use a very sharp slicing knife.

If you’re having difficulty, you can also pop the dough into the freezer for about 30 minutes to facilitate easier slicing.)

Bake for 20 minutes, switching the positions of the pans once midway.

Cool on the baking sheets on a rack for 10 minutes.

When completely cool, store in an airtight container.

Per cookie:  30 calories, 2 g total fat (0 g saturated), 5 mg cholesterol, 10 mg sodium, 5 g total carbohydrates (2 g sugars), 1 g fiber, 1 g protein.
