Eat Naked Poultry

White chicken and turkey meat are excellent sources of protein.

But remove the skin before eating the poultry or cooking it in a recipe.

This greatly reduces the fat and calorie content.

Smart poultry choices also include turkey bacon and sausage (without nitrites), which are far leaner than most of their pork counterparts.

Recipe of the Day:  Tortilla Soup With Avocados

This recipe makes a great bowl of soup worthy of being served as the first course at a dinner party.

It’s also the perfect cure for a Tex-Mex craving.

And because a serving is only 140 calories, you can have twice as much for a satisfying Mexican meal full of the flavors you love.

Makes 8 (1-cup) servings

4 corn tortillas (6-inch diameter), halved and cut into 1/4-inch-wide strips

1 teaspoon olive oil

1 medium yellow onion, chopped

1 tablespoon minced garlic

1 (14.5-ounce) can no-salt-added fire-roasted diced tomatoes

1 teaspoon chopped fresh oregano or 1/2 teaspoon dried

1 teaspoon ground cumin

5 cups fat-free, low-sodium chicken broth

1/2 cup diced carrots

1/3 cup diced roasted red bell pepper

1/3 cup diced roasted yellow bell pepper

1/3 cup diced celery

8 ounces honey-roasted or smoked turkey or chicken breast, diced

1/4 cup chopped cilantro

2 teaspoons grated lemon zest

Salt and ground black pepper to taste (optional)

1 ripe Hass avocado, diced

*Use as many organic ingredients as possible.

Preheat the oven to 350 degrees Fahrenheit.

Lightly coat a baking sheet with cooking spray.

Place the tortilla strips on the sheet in a single layer.

Bake until crisp and golden, turning once

Set aside.

In a 3-quart nonstick saucepan, heat the oil over medium heat.

Add the onion and cook for 5 minutes, or until tender.

Add the garlic and cook for 1 minute longer.

Stir in the tomatoes, oregano, and cumin.

Simmer for 10 minutes.

Add the broth and bring to a simmer.

Add the carrots, roasted peppers, and celery.

Cook for 3 minutes, or until tender.

Add the turkey, cilantro, and lemon zest.

Season with salt and black pepper, if desired.

Divide among serving bowls and top with the avocado and tortilla strips.

Per serving:  140 calories, 5 g total fat (<1 g saturated), 25 mg cholesterol, 420 mg sodium, 13 g total carbohydrates (3 g sugars), 4 g fiber, 11 g protein.
