The reason the fruits and vegetables smell – and taste – so wonderful is they’re usually picked perfectly ripe just hours before the farmers take them to the market, and they’re at their flavor and nutrition peak.
You’ll find moist soil still clinging to the roots of potatoes and radishes, and the fresh tops of beets and carrots still intact.

Recipe of the Day: Strawberry-Macadamia Shortcake

One of our favorite ways to do desserts is to maximize the natural sweetening power of fruits.
When strawberries are in season, make the most of them.
You’ll find them fresh in supermarkets, farmers markets, and your CSA – and you can even grown them in your garden.
In addition to slicing them into cereals, salads, and parfaits, turn to this classic dessert – strawberry shortcake – with a plant-powered twist.
The tender shortcakes are divine piled high with fresh strawberries, coconut topping, and a dusting of macadamia nuts.
Makes 6 servings (one shortcake each)
Nonstick cooking spray
3/4 cup almond flour or almond meal
1-1/2 cups whole wheat pastry flour
1 teaspoon cinnamon
1 tablespoon baking powder
1/3 cup soft dairy-free margarine
2 tablespoons agave nectar
3 tablespoons unsweetened coconut milk beverage
1 pound fresh strawberries, sliced (3-1/2 to 4 cups)
1 cup vanilla- or strawberry-flavored cultured coconut
2 tablespoons chopped macadamia nuts
*Use as many organic ingredients as possible.
1. Preheat the oven to 375°F. Spray a baking sheet with nonstick cooking spray. In a small bowl, mix together the almond meal, whole wheat pastry flour, cinnamon, and baking powder. Cut in the margarine with a fork, then use a wooden spoon to mix in the agave and coconut milk to make a dough. Place the dough on a lightly floured surface and roll out to about 1″ thickness. Using a 3″ round cutter, cut out 6 shortcakes. Place the shortcakes on the baking sheet and bake for 18-20 minutes, until golden brown.
2. Meanwhile, to prepare the topping, place 1/2 cup of the sliced strawberries in a small bowl and mash them with a fork to achieve a lumpy, juicy texture. Stir the coconut yogurt into the mashed strawberries. Place remaining strawberries in a 1-quart bowl.
3. While the shortcakes are warm, slice them in half horizontally. Place each bottom half onto individual dessert plates. Top each with 1/6 of the fresh strawberries (about 1/2 cup), 1/6 of the yogurt mixture (about 2-1/2 tablespoons), 1 teaspoon of chopped macadamia nuts, and the top half of the shortcake. Serve immediately.
Variation: Substitute frozen sliced strawberries when fresh aren’t available. You can also substitute sliced peaches, nectarines, bananas, or mangoes for strawberries in this recipe. To make this gluten-free, substitute 1-1/4 cups all-purpose gluten-free flour blend (like Bob’s Red Mill or King Arthur Flour) for the 1-1/2 cups whole wheat pastry flour and check that all other ingredients are gluten-free.
Per serving: 291 calories, 16 g total fat (3 g saturated), 15 mg sodium, 32 g total carbohydrates (7 g sugar), 7 g fiber, 6 g protein.
