Mow through colorful plants every day, including:

red (tomatoes, watermelon, red peppers),

green (spinach, zucchini, broccoli).
Recipe of the Day: Chana Dal Stew
Active Preparation Time: 12 minutes
Total Preparation Time: 1 hour
This spicy, flavorful stew is based on chana dal – split, polished baby chickpeas.
Dal, which means “split grain,” is a classic Indian dish featuring simmered legumes like lentils.
The golden spices and orange-red root vegetables, packed with plant carotenoids linked with heart health, further accentuate this amber legume.
Best of all, just toss all of the ingredients into a pot and it will be done in less than an hour.
Serve it with a cool grain salad.
Makes 6 servings (about 1 cup each)
8 ounces dried chana dal
5 cups water
2 medium carrots, sliced
1 medium red bell pepper, chopped
1 medium onion, chopped
2 small red potatoes, unpeeled, chopped
2 small tomatoes, chopped
1 teaspoon garam masala
1/2 teaspoon turmeric
1/2 teaspoon grated fresh ginger
2 medium garlic cloves, minced
1/4 teaspoon crushed red pepper
1 tablespoon unsalted creamy peanut butter
*Use as many organic ingredients as possible.
1. Place all ingredients in a large pot, stir well, cover, and bring to a simmer.
2. Cook for about 50 minutes, until the vegetables and chana dal are tender.
Note: You may also cook this dish in a slow cooker on high for 4 to 5 hours or on low for 8 to 10 hours.
Variation: Substitute red or yellow lentils for the chana dal and reduce the cooking time by about 15 minutes.
Per serving: 215 calories, 1 g total fat (0 g saturated), 34 mg sodium, 40 g total carbohydrates (4 g sugar), 14 g fiber, 12 g protein.
