Notoriously sour because of their high level of acid and very low sugar content, cranberries are loaded with vitamin C.
You can buy them fresh, frozen, canned, or dried.
Canned cranberries may contain added sugar, so when fresh ones aren’t available, choose frozen.
Dried cranberries also make a great addition to trail mixes, salads, and hot cereal.
When purchasing dried cranberries, be sure to choose those sweetened with fruit juice rather than sugar.
Recipe of the Day: Warm Apple and Cranberry Sauce
Originally designed as an alternative to high-sugar cranberry sauce for a holiday meal, this sauce is a delicious and traditional accompaniment to turkey roulade but also makes a great topping for oatmeal or yogurt or spooned onto virtually anything when you crave something sweet.
Makes 2-2/3 cups
1 tablespoon olive oil
4 large Fuji apples (about 2 pounds), cored, quartered lengthwise, and cut crosswise into 1/2-inch pieces
1/4 cup water
1 tablespoon lemon juice
1/4 cup coarsely chopped dried cranberries
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/8 teaspoon salt (optional)
*Use as many organic ingredients as possible.
In a large heavy saucepan, heat the oil over medium heat.
Add the apples and cook for about 10 minutes, or until the apples are lightly caramelized.
Add the water and lemon juice and stir briefly to deglaze the pan.
Carefully transfer the hot apples to a food processor and pulse just a few times to a chunky consistency.
Stir in the cranberries, vanilla extract, cinnamon, and salt, if desired.
Per 1/3 cup: 40 calories, 1 g total fat (0 g saturated), 0 mg cholesterol, 0 mg sodium, 9 g total carbohydrates (6 g sugars), 2 g fiber, 0 g protein.
