Ginger not only is very flavorful, it also has lots of health benefits.

Ginger is high in disease-fighting antioxidants and helps your liver and gallbladder break down fats and rid your body of toxins.

Ginger can even be a cure for motion sickness and is thought to help with digestion.

Recipe of the Day:  Maple-Nut Apple Treat

Not really a cake, a crisp or a cobbler, this yummy dessert is spicy, sweet, and quite simply irresistible.

For true decadence, serve warm with a dollop of fat-free vanilla frozen yogurt or Greek yogurt.

Makes 12 servings

Filling:

6 crisp sweet-tart apples, like Fuji, peeled, cored, quartered lengthwise, and cut crosswise into 1/2-inch-thick slices

1 tablespoon lemon juice

1 teaspoon vanilla extract

Topping:

1/3 cup old-fashioned rolled oats

1/3 cup white whole wheat flour

2 tablespoons chopped walnuts or pistachios

2 teaspoons ground cinnamon

1/2 teaspoon baking powder

1/2 teaspoon ground ginger

1/4 teaspoon baking soda

1/4 teaspoon ground allspice

1/4 teaspoon ground cloves

1/4 teaspoon salt

1/8 teaspoon ground nutmeg

1/3 cup buttermilk

1/3 cup maple syrup

1/4 cup olive oil

1 teaspoon vanilla extract

*Use as many organic ingredients as possible.

Preheat the oven to 375 degrees Fahrenheit with an oven rack in the center position.

Lightly coat a 9 x 9-inch baking pan with cooking spray.

To make the filling:  In a large bowl, toss the apples with the lemon juice and vanilla extract.

Transfer to the baking dish.

To make the topping:  Combine the oats, flour, nuts, cinnamon, baking powder, ginger, baking soda, allspice, cloves, salt, and nutmeg in a medium bowl.

Mix well.

Combine the buttermilk, maple syrup, oil, and vanilla extract in a small bowl.

Quickly fold the buttermilk mixture into the dry ingredients.

Spoon the topping over the apples.

It will just cover the apples.

Bake for 30 minutes, or until the topping is puffed.

Spoon into bowls and serve warm.

Per serving:  190 calories, 6 g total fat (0 g saturated), 0 mg cholesterol, 105 mg sodium, 35 g total carbohydrates (23 g sugars), 4 g fiber, 2 g protein.
