The Perfect Avocado
Avocados ripen and spoil quickly, so if you buy them ripe, be sure to use them immediately.
You can also buy them slightly immature and keep them refrigerated until a day or two before you need them, at which time you should store them at room temperature to finish the ripening process.
To hasten ripening, place avocados in a brown bag with an apple.
The natural ethylene gas released by the apple hastens the ripening process.
Recipe of the Day: Asian Avo “Mayo”
This “mayo” is a delicious way to enjoy a creamy, rich spread on your sandwich while using only good fats and a fraction of the calories of mayonnaise.
It also goes well with small rice crackers; or try using a dollop in place of sliced avocado in tortilla soup.
Makes 3/4 cup
1 ripe Hass avocado, coarsely chopped
3 tablespoons warm water
2-1/2 teaspoons rice vinegar
2 teaspoons chopped pickled sushi ginger
1 teaspoon low-sodium soy sauce
1 teaspoon Dijon mustard
1/2 teaspoon toasted sesame oil
*Use as many organic ingredients as possible.
Combine the avocado, water, vinegar, ginger, soy sauce, mustard, and oil in a food processor or blender and puree until smooth.
Transfer to a small jar and refrigerate.
The “mayo” keeps refrigerated for 2 days.
Per tablespoon: 25 calories, 2 g total fat (0 g saturated), 0 mg cholesterol, 10 mg sodium, 1 g total carbohydrates (0 g sugars), 0 g fiber, 0 g protein.
