What Is Kefir?
Kefir comes to us from the Middle East and was traditionally made with camel’s milk.
Today it’s commercially made using cow’s milk.
It’s fermented and has a tangy, yogurt-like taste and a texture that’s both smooth and slightly fizzy.
Kefir is sold in low-fat and fat-free varieties in cartons or bottles and should be kept refrigerated.
Recipe of the Day: Very Berry Smoothie
You can mix and match your favorite berries in this smoothie to create a number of different flavors and textures.
If fresh berries aren’t available, use frozen berries – just eliminate the added ice.
Makes 2 (1-cup) servings
1 cup low-fat plain kefir
1/2 cup blackberries
1/2 cup blueberries
1/2 teaspoon vanilla extract
Pinch of ground cloves
6 ice cubes
*Use as many organic ingredients as possible.
Combine the kefir, berries, vanilla extract, cloves, and ice in a blender and puree until smooth.
Per serving: 90 calories, 2 g total fat (1 g saturated), 5 mg cholesterol, 70 mg sodium, 15 g total carbohydrates (11 g sugars), 3 g fiber, 6 g protein.
